CHOCOLATE COCONUT LACTATION MUFFINS

12 muffins / 24 mini muffins

PREP TIME:

TOTAL TIME:

25 minutes

INGREDIENTS
  • 1 cup oat flour

  • 1/2 cup rolled oats

  • 1/4 cup flax seed meal

  • 2 scoops brewers yeast (about 60 grams)

  • 1 whole egg

  • 1/4 cup unsweetened shredded coconut

  • 4 tbsp honey

  • 1/4 cup dark chocolate chips (I use Enjoy Life)

  • 1/4 cup unsweetened almond milk

  • 5.3oz greek yogurt cup (plain or coconut flavor)

  • *1 scoop chocolate protein powder (optional)

  • 1 tsp baking powder

 
DIRECTIONS
 
  1. Mix all ingredients together in a mixer or by hand

  2. Spray muffin tins with cooking spray or coat with coconut oil

  3. Bake 350 degrees for 20 minutes (12 minutes for mini muffins)
