CHOCOLATE COCONUT LACTATION MUFFINS

INGREDIENTS
- 1 cup oat flour
- 1/2 cup rolled oats
- 1/4 cup flax seed meal
- 2 scoops brewers yeast (about 60 grams)
- 1 whole egg
- 1/4 cup unsweetened shredded coconut
- 4 tbsp honey
- 1/4 cup dark chocolate chips (I use Enjoy Life)
- 1/4 cup unsweetened almond milk
- 5.3oz greek yogurt cup (plain or coconut flavor)
- *1 scoop chocolate protein powder (optional)
- 1 tsp baking powder
DIRECTIONS
- Mix all ingredients together in a mixer or by hand
- Spray muffin tins with cooking spray or coat with coconut oil
- Bake 350 degrees for 20 minutes (12 minutes for mini muffins)
